We have 9 teflex sheets for our dehydrator so that when i want to dry soft foods like fruit straps and cookies I can fill the whole drier. I would recommend at least 4 sheets for a small family and the full 9 sheets for a larger family. The sheets that come with the dehydrator are good enough for most items but the larger holes in the mesh mean that soft or runny foods will fall through.
